Feed 4 for £10: Lemon Prawn Rice Pot

"I don't have time to cook paella, and it never tastes good anyway!"
Okay so the recipe I'm suggesting today isn't actually a proper paella, however it tastes just as good as the real deal! I actually first tried this when my mum made it, and I loved it that much I made it myself less than a week later. I'll soon convert my flat mates into liking it.

  • 1 tbsp oil (£0.02)
  • 1 onion, sliced (£0.16)
  • 2 small peppers , deserved and sliced (£0.32)
  • 50g chorizo, thinly sliced (£0.90)
  • 2 garlic cloves, crushed (£0.06)
  • 2 chillies, sliced (£0.20)
  • Half a teaspoon turmeric (£0.02)
  • 250g long grain rice (£0.12)
  • 200g peeled prawns, defrosted if frozen (£3.20)
  • 100g frozen peas (£0.16)
  • 3 lemons, juiced (£0.90)

So that brings you to a total of  £6.06 for four people - a brilliant £1.52 per portion! One thing I would note is that you can either buy the deli counter chorizo and get them to thinly slice it and you then cut it into smaller chunks, or buy yourself a half ring of chorizo. This does cost more, but you can then use the leftover chorizo in the Chicken, Chorizo and Chickpea Casserole recipe that we shared a while back! You can also change the amount of chillies or the amount of lemon depending on how you like it, but I've found I love this ratio. Another thing you can do to cut the spice is remove the seeds from the chillies or just cook them whole.

  1. Boil your kettle and heat the oil in a shallow pan with a lid. I tend to use a large saucepan.
  2. Fry the onion, peppers, chorizo, garlic and chilli over a high heat for 3 minutes.
  3. Add the tumeric and rice and stir well to make sure the rice is fully coated.
  4. Pout in 500ml of boiling water, cover, then cook for 12 minutes. Do not uncover or stir during this time!
  5. After your 12 minutes are up, stir the rice.
  6. Stir in the prawns and peas and cook for another minute.
  7. Add in the lemon zest and juice, and season if you'd like to.

And there you go! Told you it would be quick and easy! As always, let me know if you make it, what you think, and if you'd make any changes! I'd love to hear from you.
